3 pounds Yukon gold potatoes
2 teaspoons salt, divided
1/3 cup butter
1/3 cup half-and-half
4 ounces cream cheese, softened (Gran always uses cream cheese; I use Butter)
3/4 teaspoon coarsely ground pepper

Note: Can use 1 - 11/2 stick of butter instead of cream cheese & 1/3 cup of butter. Also can use milk for half and half

Directions:
Directions:
Peel potatoes, and cut into 1-inch pieces. Bring potatoes, 1 tsp. salt, and cold water to cover to a boil in a medium-size large pot over medium-high heat. Reduce heat to medium-low, and cook 16 to 20 minutes or until fork-tender; drain.
Add butter, next 3 ingredients, and remaining 1 tsp. salt.
Beat Until Smooth or can hand mash
Serve immediately.
