2 tbsp. olive oil
3 small zucchini
1/2 spanish onion, cut in half and sliced
10-15 cherry tomatoes, cut in half
Salt and pepper to taste
Cayenne pepper to taste (optional)

Directions:
Directions:
Cut zucchini in half cross-wise, then cut halves into quarters or sixths lengthwise (depending on thickness of zucchini).

Heat oil in frying pan; add zucchini and onions, and cook on medium heat for approximately two minutes. Add tomatoes and spices, cooking for another two minutes or until zucchini is cooked to desired softness.
