2 small heads of lettuce
2 small cucumbers, thinly sliced
2 small bunches radishes, sliced
6 scallions, cut in short pieces
4 firm red tomatoes, cut in wedges
about 18 kalamata olives
⅔-¾ cup olive oil
½ cup wine vinegar
2 tsp. salt
2 tsp. oregano
8 slices feta cheese
12 anchovy fillets

Directions:
Directions:
In a large bowl, shred the lettuce and add cucumber, radishes, scallions, tomatoes, and olives. Mix together the olive oil, vinegar, salt, and oregano and pour over the vegetables. Toss to mix well, then serve into individual bowls. Place a slice of cheese and an anchovy fillet over top of each.

Makes 8 servings.
