1 lb. pork butt
salt and pepper
1 tsp. oregano
1 Tbsp. vegetable oil
1 cup dry red wine
juice of ½ lemon

Directions:
Directions:
Cut fat away from meat, then cut into 1-inch cubes. Sprinkle with salt, pepper, and oregano. Heat the oil in a skillet and brown the meat well. Drain off the fat, then add the wine, cover, and simmer for ¾ hour. Add the lemon juice, toss to coat meat cubes evenly, and cook 5 minutes longer. Serve hot from a chafing dish with toothpicks.

Serves 8 (fondue servings)
