½ lb. large black olives
2 stalks celery, from center of head, finely chopped
2 cloves garlic, finely chopped
½ lemon, cut in small pieces
juice of 1 lemon
½ cup olive oil
¾ cup wine vinegar
1 Tbsp. oregano

Prepare 2-3 weeks in advance.

Drain the olives and slit one side of each with a knife to allow the marinade to penetrate. This is not necessary for kalamatas, which have a natural slit. Combine the olives with all the other ingredients and pack in jars. If the liquid does not completely cover the olives, add water to cover. Seal and allow to marinate 2-3 weeks before serving. Shake the jars every few days. The olives will keep well in this marinate for 6 months.
