1½ lb. flank steak, cut into strips against the grain, each about 2"x½' and ¼" thick
1 bottle oyster sauce
1 cup fresh pea pods
3 tsp. corn starch
peanut oil as needed

Directions:
Directions:
Lightly cover meat with corn starch, mixing together to coat all pieces. Pour peanut oil over to prevent stickiness and to moisten (2 Tbsp.). At the stage, the meat can be refrigerated for several days.

Stirring all the time, fry pea pods over high heat in peanut oil (1-2 Tbsp.). When bright green (after 1-2 minutes), remove from pan and keep warm.

Add more peanut oil to the pan and then stir-fry the meat over a very hot heat. Keep the meat moving until pink has disappeared from the outside of the meat (about 3 minutes). Lower the temperature and add ½ cup oyster sauce. Stir continuously for 2 minutes, folding in the pea pods.

Makes 8-10 servings.
