Meatloaf:
1 1/2 lbs. ground beef
1 small onion, finely chopped
1/3 c. rolled oats
1 egg
1 tbsp. parsley
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder

Stuffing:
Shaved ham
Thinly sliced mozzarella cheese

Directions:
Directions:
Preheat oven to 350ºF (175ºC).

Combine and mix all meatloaf ingredients in a large bowl. Pack approximately two-thirds of mixture into a loaf pan; make a well in the centre. Place ham in well; top with cheese. Pack remaining meatloaf on top. Bake for 45-60 minutes.

Ham and cheese may be substituted with other types of meat and cheese, or eliminated completely. If eliminating the stuffing, put a layer of chili sauce on top of meatloaf before placing in oven.
