Salad:
3 c. cooked quinoa
1 c. corn
1 can black beans, drained and rinsed
3 green onions, finely sliced
1 red pepper, seeded and diced
1/3 c. chopped cilantro (optional)

Dressing:
Lime zest
1/4 c. fresh lime juice
1 clove garlic, minced
1 tsp. ground cumin
1/4 tsp. cayenne pepper
5 tbsp. olive oil
Salt and pepper

Directions:
Directions:
Place salad ingredients in a large bowl. Combine the lime zest, juice, cumin, cayenne pepper, and garlic in a separate bowl; whisk in oil. Drizzle the dressing over the quinoa mixture and toss gently. Season with salt and pepper.
