3 cups of flour
1 tsp. dry yeast
3 tbsp. melted butter or ghee
⅓ cup sugar
2 tsp. cardamom powder coarsely ground
¾ cup milk

Directions:
Directions:
1. Using warm milk, add 1 tsp. sugar and 1 tsp. dry yeast. Keep the milk aside to ferment.
2. In a mixer, add flour, melted butter or ghee, sugar and cardamom powder and mix.
3. Slowly add the fermented milk until the dough is soft but not sticky. If the dough is dry, add a tbsp. of warm milk at the time until the dough is soft, not sticky and pliable.
4. Take the dough out of the mixing bowl on to a clean surface. Knead the dough for about 5 minutes. Roll the dough into a ball and set aside in a bowl covered with plastic wrap for about 15 minutes.
5 Take 2 baking trays, place parchment paper, and sprinkle flour.
6. Remove the dough from the bowl and divide it into 5 sections. Roll each section of the dough into balls.
7. Using a rolling pin, flatten the balls, and cut each into 4 pieces. While working cover the rest of the dough balls.
8. Place the mandazi pieces on the parchment paper on the tray.
9. Cover the trays with kitchen towels and place in a cold oven with just the light turned on for about 2 - 3 hours.
10. At this time the mandazis should have doubled in size.
11.Heat oil in a wok on medium heat and deep fry the mandazis until they are golden brown, turning frequently.
12. Place the mandazis on a tray with paper towel to soak any excess oil.
13. Serve with Chai or Barazi.
