2 cups flour
4 tsp. baking powder
1/2 tsp. salt
1/4 cup sugar (a little more if you like them sweeter)
2 eggs
1/2 cup vegetable oil
2 cups milk
1 tsp. vanilla extract

Directions:
Directions:
Preheat and oil waffle maker.
Sift dry ingredients into a medium sized mixing bowl.
Separate egg whites. Set yolks aside for wet ingredients.
Beat egg whites into stiff, glossy peaks. Whites should double in volume.
Mix yolks, oil, and vanilla gently in a separate bowl.
Pat a well in the center of the dry ingredients and pour in wet ingredients. Mix together until smooth.
Fold in egg whites. The mix should feel lighter.
Pour into waffle maker/iron and cook.
