2 cups shredded sharp, natural cheddar cheese
1¼ cups flour
½ cup butter or margarine, melted
36 pimiento-stuffed olives, drained

Directions:
Directions:
Mix cheese and flour. Stir in butter until mixture is smooth. If dough seems dry, work with hands. Shape dough by level teaspoonfuls around olives.

Place 2 inches apart on ungreased baking sheet. Cover; chill at least 1 hour. Heat oven to 400 degrees. Bake 15-20 minutes.

To serve later: Freeze uncovered on ungreased baking sheet until very firm, at least 2 hours. Place cheese balls in plastic freezer bags and place back in freezer until ready for use. 25 minutes before serving, heat oven to 400 degrees. Remove olive-cheese balls from freezer; place 2 inches apart on ungreased baking sheet. Bake until hot, about 20 minutes.

Makes 36 crudite.

I loved it when Nana served these before special dinners! They can be made with or without olives, but I recommend including the olives. They are a delicious compliment to the sharp cheddar cheese.
