3 lbs. ground beef steak
¾ lb. ground pork
3 eggs
3 Tbsp. cornstarch
1½ cup milk (scalded)
⅜ tsp. nutmeg
⅛ tsp. ginger
salt and pepper to taste
½ cup butter

Gravy:
⅓ cup butter
2 Tbsp. flour
1 ½ cups water

Directions:

Grind beef steak and pork together a total of three times. Blend all ingredients. Roll into small balls (size of large walnut) and brown in butter. Reduce heat to low and simmer very slowly until done, turning often to retain round shape, adding a little water if necessary. Remove meatballs when done (approximately 1 hour).

Add more butter to drippings. Add flour and brown over low heat, stirring constantly. Remove from heat and add water. Return to heat and bring to boil over medium heat. Boil for one minute, stirring constantly.

Makes 8-10 servings.
