5 eggs beaten
2½ cup sugar
2 cups heavy cream
4 cups flour
4 tsp baking ammonia
2 tsp baking powder
1 cup butter
Peppermint flavoring

Directions:
Directions:
Mix dry ingredients and butter. Add: cream, eggs, sugar, peppermint flavoring. Mix like pie crust.
Make soft dough. Add more flour if necessary. Chill dough over night. Bake at 350º until done.

Cooking Ammonia is a chemical leavener that was used before the advent of baking soda and baking powder. Cooking Ammonia releases gas fast and gives a quick rise to something baking in the oven.

What can you instead of baking ammonia? Substitutions. If ammonium carbonate is not available, baking powder can be substituted in a 1 to 1 ratio. You can add some baking soda together with baking powder.
