2 T. chopped celery leaves
1 T. chopped onion
3 T. butter
¾ cup dry bread crumbs
½ can corn, drained
⅔ cup chicken broth
1 T. parsley
salt, pepper, paprika, sage, thyme
2 pork loin chops (extra thick)

Directions:
Directions:
Preheat oven to 350º F.

In a skillet, saute onion, celery leaves in butter until
soft. Remove from heat, stir in bread crumbs, corn,
⅓ cup of the chicken broth and seasonings. Mix well.

Cut a pocket in each pork chop. Spoon stuffing/corn
mixture in the chop. Secure with string or toothpicks.
Melt more butter in the skillet and sprinkle salt and
pepper on chops and brown them on
both sides. Place in a greased baking dish and pour
remaining broth over the chops. Bake
for 40-50 min. Remove string or toothpicks before
serving.
