For the Loaf
1 lb hamburger
2 eggs
1/2 large onion finely minced
1/4 red pepper finely minced
1/4 green pepper finely minced
1 - 1 1/2 cups seasoned bread crumbs
salt & pepper
parchment paper

Topping
1 small can tomato sauce (smallest one you can find)
1/4 small can tomato paste
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground mustard
1 pinch cayenne powder
1/3 cup Vinegar
1/3 cup Brown sugar

To make the loaf:

Cover sheet pan with parchment paper. In a marge bowl combine all ingredients. Liberally salt and pepper all ingredients. Using your hands mix all ingredients until thoroughly combined.. Take mixture and dump onto sheet pan. Shape into a 1 1/2-2" high loaf. Set aside and make topping..

Preheat oven to 350 degrees.

In a small saucepan, combine all ingredients and taste. Add spices as needed to suit your taste. Let mixture simmer for 5 minutes or so.

Cover meat loaf with topping and bake at 350 degrees for approximately 20-25 minutes.

Slice and serve with veggies and a potato of some sort.

You can serve this Italian style with a red marina instead of the topping in this recipe. This recipe can be doubled but you may need to increase the baking time by 10-15 minutes.

It takes 3lbs of hamburger to feed our family. This recipe is good for 2-3 people only.
