10 eggs
2½ lbs. shrimp

1½ tsp. dry mustard
¾ tsp. salt
½ tsp. white pepper
½ tsp. Accent (optional)
2 Tbsp. finely chopped onion
2 Tbsp. lemon juice
4-5 Tbsp. mayonnaise

Pimiento

Hard cook eggs and cut in half lengthwise. Remove egg yolks to a bowl. Force yolks thru sieve or mash with fork.
Stir in seasonings and blend in onion and lemon juice. Stir in mayonnaise until smooth.Spoon mixture lightly into egg whites. Garnish with pimiento and place in center of serving dish on bed of lettuce.

Steam shrimp, peel, and devein. Arrange shrimp in circle around eggs.

Makes 10-12 servings.
