1 leftover ham bone or ham
1 or 2 cans of navy beans or great northern beans
1 cup carrots, sliced
1 cup celery, sliced
1 onion, chopped
Peas (approx ½ cup) if desired
Corn (approx ½ cup) if desired
Potatoes cut into bite size pieces
Chopped flat leaf parsley
1 tsp. thyme
½ tsp. salt
½ tsp. pepper
Few dashes of hot sauce

Directions:
Directions:
Place the ham bone in a large pot. Fill ⅔ full of water. Bring water to a boil for approx 15-20 minutes. Remove ham bone and cut all meat off the bone. Return chopped or shredded ham to the pot of water (discarding bone) and add all vegetables, beans and seasonings. Bring to a boil, then simmer on low for 1 hour or more until vegetables are tender.
