Prawn Marinade
15 large shrimps or prawns deveined, heads and tails removed
1 tsp. ginger
1 tsp. garlic
1 tbsp. lemon juice
¼ tsp. salt
½ tsp. coriander and turmeric powder

Noodles
1 packet of Rice Vermicelli Noodles
Hot Water to soak the noodles

Sauce
½ tsp. of coriander and cumin powder
½ tsp. turmeric powder
½ tsp. paprika
¼ tsp. chili powder
1 tbsp. water
1 tbsp. light soy sauce
¼ tsp. of dark soy sauce
½ tsp. of sesame seed oil
¼ tsp. of salt

1 sliced onion
1 tbsp. oil
2 spring onions sliced
½ red pepper cut in thin slices
1 egg
.Bean sprouts

Directions:
Directions:
1. Soak the noodles for 3 - 5 minutes in boiling hot water.
2. Marinate the prawns in 1 tsp. ginger and 1 tsp. garlic, and 1 tbsp. lemon juice. Sprinkle ½ tsp. of coriander and turmeric powder and ¼ tsp. salt and keep aside.
3. Prepare the sauce by adding all the ingredients under sauce.
2. Remove the noodles from the water and allow to dry on a clean kitchen towel.
3. Heat a wok on high heat and add 1 tbsp. oil.
4. Beat the egg, scramble and remove on to a plate.
5 Drizzle a little oil and add onions, fry a minute remove on to the same plate as the egg.
6. Drizzle a little oil, and add red peppers. Stir fry for a minute and remove on to the plate.
7. Drizzle a little oil and add the marinated prawns and stir fry until they turn pink and remove on to the plate
9. Drizzle a little oil and add bean sprouts. Stir fry for a minute and add to the plate.
8. Drizzle a little oil and add the noodles and stir fry for a minute.
9. Transfer the vegetables, prawns, egg, to the wok and mix.
10 Pour the sauce on the noodles and mix and cook for 2 minutes for the spices to blend with the noodles.

Garnish with green onions and serve.
