½ c. butter or coconut oil
½ c. sugar
½ c. brown sugar
1 egg
½ tsp. vanilla
1 c. flour
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 c. oatmeal
½ c. chocolate chips, nuts, raisins or other dried fruit, coconut, or combination that equals ½ c.

Directions:

Cream butter/oil with sugars. Add egg and vanilla; beat well. Add remaining ingredients, except oatmeal and nuts, etc.
Add in oatmeal and nuts, etc.; mix well. Drop by teaspoon on greased cookie sheet and bake at 350º for 10-12 minutes.

This recipe has been in my family for generations. I call this my dump cookie recipe as I use up odds and ends of nuts, fruits, etc. Since everyone in my family is a cookie monster, I ALWAYS double this recipe.
