3 Kg Paya
5 chopped tomatoes
2 tbsp. ginger paste
2 tbsp. garlic paste
1 tsp. green chili paste
½ tsp. paprika
2 tsp. salt
2 tbsp. olive oil
2 tbsp. lemon juice
1 tbsp. tomato paste
1 tsp. turmeric
1 tsp. cumin and coriander powder
1 tsp. garam masala
1 cinnamon stick
3 pods cardamom
4 cloves
4 black pepper pods
3 chopped onions
1 bunch of chopped cilantro
Sliced Julian cut fresh ginger

1. Clean the paya well. If there is any hair left, remove the hair by coating with white flour and wash them under running water.
2 In a pressure cooker, add paya, chopped tomatoes, 1 tbsp. ginger, 1 tbsp. garlic, 1 tsp. green chili paste, 1 tsp. salt, 1 tbsp. lemon juice, 1 chopped onion, half of the chopped tomatoes, black pepper pods, ½ tsp. turmeric, ½ tsp. of cumin and coriander powder, 2 tbsp. olive oil and 1 tbsp. of cilantro,
3.Cook for about 20 minutes in the pressure cooker on medium high heat. If the Paya are not cooked cook in the pressure cooker for another 5 - 10 minutes.
4. In a large saucepan, add 3 tbsp. of oil, cinnamon stick, cardamom pods and cloves. Add onions and fry the onions until they turn golden brown. Add 1 tbsp. ginger and 1 tbsp. garlic. Cook for 30 seconds and add tomatoes, and cook until they are soft. Add tomato paste, 1 tbsp. lemon juice, 1 tbsp. cilantro leaves, ½ tsp. turmeric, ½ tsp. of cumin and coriander powder. Add the water from the paya. When the water comes to a boil add the Paya and let it simmer for about 10 minutes. Taste the sauce if it needs more lemon juice, salt or chillies. Sprinkle garam masala, and cilantro. Leave some cilantro for garnishing.

Serve in a bowl and garnish with cilantro, Julian ginger.
