1 lb. smoked sausage, sliced ¼-inch thick
1 large green pepper, chopped
1 large onion, chopped
6 cloves garlic, chopped
1 small can shrimp or chicken
8 oz. tomato sauce
1 small pkg. frozen sliced okra, or about 2-3 c. fresh okra, sliced
2 tsp. gumbo filet powder
1-2 bay leaves
1 onion bullion cube
1 chicken bullion cube
1/2 c. bacon grease, divided [2 Tbs. & ⅓ c.]
1/3 c. flour
6 c.water [You may need more, depending on how thick you want the broth.]

Brown sausage, onion, green pepper and garlic in 2 Tbs. bacon grease. Remove from pan and add ⅓ c. bacon grease; stir in flour and cook until it is golden brown. This may take several minutes. Add 6 c. water; stir. Add remaining ingredients and simmer for 30 minutes. Serve with a scoop of rice in a bowl. This freezes well.

My great-grandparents emmigrated from France and settled in Louisiana. These recipes were never written down. We learned to make them by watching and doing. Large gardens were necessary to feed the large families. My PawPAw Brown dared weeds to grow in his garden! He weeded so relentlessly that none of us ever saw a weed. MawMaw Brown had been a red-head in her youth, and dyed her hair with mercurochrome when she was in her 80's!
