1 cup flour
½ cup whole wheat flour
2 tsps. baking powder
½ tsp. salt
½ tsp. cinnamon
¼ tsp. nutmeg
½ cup brown sugar
1 egg
½ cup milk
⅓ cup vegetable oil
1 cup carrots, peeled and grated
½ cup raisins

Directions:

Grease muffin tins. Preheat oven to 400ºF. Combine dry ingredients in large bowl. Beat together egg, milk and oil. Pour into dry ingredients. Stir just until ingredients are moist. Fold in raisins and carrots. Fill tins ⅔ full. Bake at 400ºF for about 20 minutes. Makes 12. Serve with orange butter.
