Puerto Rican Fried Chicken Recipe

3 lbs. of chicken pieces, skin on
2 cups all purpose flour
2 envelopes Sazon
Adobo
black pepper
vegetable oil for frying

Seasoning:
splash of olive oil
1 T. vinegar
minced garlic or garlic powder
onion powder (optional)
oregano
½ cup fresh lime juice
(lime preferred but lemon or
orange are okay in a pinch)

Directions:
Directions:
Season the chicken and put all of it in
a glass dish. Cover and refrigerate for 4 hours
or overnight.

When ready to fry chicken, heat enough oil to
cover the chicken in a large dutch oven to 400º F.
While oil heats, season flour with Sazon, a little
Adobo and pepper. Place seasoned flour in a
zip loc bag and mix chicken in it until well coated.
Shake off excess flour.

Fry chicken in batches for about 3 min. Remove from
oil and drain on a plate lined with paper towels.

Lower the heat of the oil to 300º F and put all the chicken
back in the pot, cover and fry for 10 min.

Remove chicken from oil and drain again.

Raise the heat of the oil back to 400º F. and fry chicken in
batches til golden brown without burning.
Remove and drain once more.
