2 cups cake flour
1 tsp baking powder
1/2 tsp salt
1 cup Nutiva butter flavored coconut oil (very important. this ingredient gives it that butter flavor,online stores have it as well as Whole Foods)
2 cups sugar
2 tbsp fresh lemon juice
1 tsp vanilla extract
1/4 tsp almond extract.
1 cup unflavored vegan yogurt ( I used almond yogurt)
Fresh fruit for topping.

Preheat oven to 350 and grease a loaf pan.Cream the sugar and the buttered flavored oil in a stand mixer or by hand,Add the yogurt and extracts.Mix in the flour.salt and baking powder,Mix till well combined. Pour into pan and bake 50 min to a hour or until toothpick comes out clean in the center.Mine only took 50 min but it depends on your oven,ovens vary greatly so check often.Cool completely before cutting.Top with fresh fruit.
