1 beaten egg
¼ cup vegetable oil
grated peel and juice of 1 orange
skim milk
2 cup flour
1 cup sugar
¼ tsp salt
1 ½ tsp baking powder
½ tsp baking soda
½ cup finely chopped pecans
½ cup frozen or fresh cranberries

Directions:
Directions:
1. Spray loaf pan with vegetable cooking spray. Prepare bowl number 1: egg, oil, orange peel, juice, enough skim milk to make the orange juice up to 1 cup, usually about 2/3 cup, mix.

2. In a separate bowl, mix flour, sugar, salt, baking powder, baking soda, pecans, cranberries. Add two bowls together, mixing gently to combine ingredients. Do not completely blend the wet and dry.

3. Bake 55-60 minutes or until toothpick comes out clean. Let cool 10 min, turn out on the rack.
