1 pound ground beef
2 large carrots, shredded coarsely (1½ c.)
1 medium onion, chopped (½ c.)
½ c. cornflake crumbs (I use ¼ c. coarse corn meal [polenta].)
½ c. milk or plain yogurt
1 egg
1 tsp. Worcestershire sauce
1 tsp. salt
¼ tsp. pepper

Mix well all ingredients. Shape into a loaf and place in a baking dish or place in a 8x4 loaf pan. Bake at 350º for 1 hour or until baked through. Drain fat from pan. Let meat loaf stand for 10 minutes, then turn out on platter and slice.
