1 qt. tomato juice or tomato chunks
⅛ tsp. baking soda
1 Tbs. butter
1 c. can milk
2-3 Tbs. flour or cornstarch
2 c. milk
salt & pepper
2 Tbs. chopped onion
1 Tbs. chopped hot pepper (optional)

Directions:
Directions:
Saute onion and hot pepper in butter. Add tomatoes or juice and heat to boiling; stir in baking soda. It will foam slightly. Combine canned milk and flour or cornstarch, making sure there are no lumps. Stir into tomatoes. It may curdle, but will cook out. A minute later, add milk and salt & pepper to taste. Heat through. Recipe may be doubled.

This recipe has been in my family for generations. We have always had gardens, so we use home-canned tomatoes to make this. At times, I have cooked up fresh tomatoes, until soft, and then continued on with the recipe. If I want it smooth, I use an immersion blender.
