4 carrots, peeled and cut into 3-inch sticks ( I don't peel them.)
1½ Tbs. apple cider vinegar
1½ Tbs. olive oil
1 clove garlic, minced
½ tsp. salt
¼ tsp. sugar
Chopped fresh parsley

Combine all ingredients; cover and chill 8 hours. Drain, if desired.
