3 pound broiler-fryer chicken, cut up
1¼ c. grated Parmesan cheese
1 tsp. salt
¼ tsp. pepper
⅓ c. butter, melted

Directions:
Directions:
Wash chicken and pat dry. Mix cheese, salt and pepper. Dip chicken into butter, then coat with cheese mixture.

Place chicken skin side down in greased 13x9 baking pan. Pour remaining butter over chicken. Bake uncovered 30 minutes at 425º. Turn chicken; bake 20 minutes longer or until tender. Serve hot or cold.

This is great for picnics. I made this for a cub scout meeting/meal. One man chose a chicken leg, placed it in his mouth and moved forward to the next dish. As soon as his taste buds registered the taste of the chicken, he backstepped and grabbed a second piece.
