1 ½ pounds rhubarb, sliced
1 c. sugar
pinch of salt
2 Tbs. butter

Topping:
1c. flour
3/4 c. sugar
1 tsp. baking powder
¼ tsp. salt
1 egg
½ tsp. vanilla

Optional:
Cream to pour on top of each serving.

Directions:
Directions:
Stir together rhubarb, sugar and salt; place in greased 9x9 baking dish. Dot top with butter.

Mix together dry ingredients and stir in egg and vanilla. Pour over rhubarb. Bake at 375º - 400º for 30-40 minutes.

I made this for a cub scout meeting/meal. My youngest son, Greg, inhaled his meal and made it to the dessert table before anyone else. By the time others were ready for dessert, he had eaten most of the rhubarb shortcake himself.
