2 c. diced potatoes
½ c. minced onion
½ c. diced celery
1 tsp. salt
2½ c. water

Thickener:
4 TBSP butter
4 TBSP plain flour
¼ tsp black pepper
½ tsp. dry mustard
1½ tsp worcestershire sauce
2 c. milk

¼ lb. velveeta cheese
1 can chopped tomatoes, drain
1 TBSP parsley

Directions:
Directions:
In a pan, cook the potatoes, onion, celery, and salt in the water until tender.

In a separate pan, melt butter. Add flour and stir until thick. Add milk and worcestershire sauce. Add black pepper & mustard. Stir until thickened. Add cheese and stir until melted.

Stir in the potato mixture into cheese sauce. Add drained tomatoes and parsley. Soup can simmer but don't allow to boil.
