1 tsp butter
½ tbsp. vegetable oil
500 g thinly sliced onions
1 tsp. salt
freshly ground pepper
1 tbsp. flour, ½ cup dry white wine
1L hot chicken or beef stock
4 slices French bread
1 clove garlic
1 cup grated swiss gruyere cheese
1 tsp tomato paste

Directions:

1. Heat butter and oil in a sauce pan over medium heat. Stir in sliced onions and simmer for 10 minutes. Sprinkle flour over onions and simmer for an additional 5 minutes. Pour the hot stock, tomato paste and white wine over onions. Stir with a wooden spoon and bring to a boil. Simmer 30 minutes, taste for seasons, add salt and pepper if necessary.

2. While the soup is simmering, bake the 4 slices of bread for 5 minutes on each side in a preheated oven. Rub each slice of baked bread with the garlic clove. Ladle the soup into the individual soup bowls, place the French bread on top and spread with grated cheese. Put bowls under broiler for 10 minutes, serves 4.
