1 onion, chopped
1 fresh jalapeno, seeded and finely chopped
1 tbsp. grated fresh ginger
3 garlic cloves crushed
2 tsp curry paste or powder
1 tsp cumin
1 tsp turmeric
½ tsp salt
1 medium dark-fleshed sweet potato, peeled and cut into ½ in cubes
½ cup dry red lentils
1 14. Oz can coconut milk
1 cup water
a big handful of baby spinach leaves

1. Olive oil, 1 onion, chopped, 1 fresh jalapeno (seeded and finely chopped, 1 tbsp. grated fresh ginger, 3 garlic cloves crushed, 2 tsp curry paste or powder, 1 tsp cumin, 1 tsp turmeric, ½ tsp salt, 1 medium dark-fleshed sweet potato, peeled and cut into ½ in cubes, ½ cup dry red lentils, 1 14. Oz can coconut milk, 1 cup water, a big handful of baby spinach leaves.
2. Uncover and tear in the spinach, stir, then return the lid and cook for another minute or two, just until the spinach wilts. Serve immediately, over rice. Serves 4-6.
