1 head of cauliflower, trimmed and cut into medium sized pieces
2 T heavy cream
1 T butter
1/4 cup sharp cheddar cheese, shredded
Salt and pepper, to taste

Directions:
Directions:
1. Place cauliflower in a microwave safe bowl with 2 T of cream and 1 T of butter.
2. Microwave, uncovered, on high for 6 minutes.
3. Stir to coat cauliflower with cream/butter mixture. Microwave for another 6 minutes on high.
4. Remove from the microwave and put into a high speed blender or food processor, along with the cheese. Puree until smooth.
5. Season with salt and pepper to taste. You can adjust the cream and butter to your preference.
