2 1/2 - 3 c flour (I use bread flour)
1 pkg yeast
1 1/4 c water
1 T sugar
3/4 t salt




Directions:

In Mixing bowl combine:
1 c flour
yeast

Put the other 2 cups of flour in to a separate bowl

In sauce pan heat just until warm, stirring until sugar and salt are dissolved:
1 1/4 c water
1 T sugar
3/4 t salt

Add to dry ingredients
Beat at low 1/2 minute
Beat at high 3 minutes

Add remaining flour (by large spoonful) until you can't stir anymore in (or if you're using an electric mixer, until the dough forms a ball as you're mixing)
Knead 5-6 min, adding additional flour as you go, until you get a nice smooth, soft dough ball

Place in a greased bowl, cover and let rise (approx 1 hour) until approx double in size

Punch down, let rest 10 minutes

Grease bread pan or 1 qt casserole (my mother always baked these as round loaves)
Place bread in pan
Cover and let rise for 30-45 min

Bake at 400 degrees for 40-45 minutes
