2 tablespoons olive oil
1 cup chopped onion
2 garlic cloves, minced
4 fresh Anaheim chilies, roasted, peeled, seeded and diced OR 1 (4-ounce) can mild chilies
1 to 2 Jalapeno peppers, fresh or canned, minced
1 cup diced tomato, fresh or canned
8 ounces Monterey Jack cheese, shredded
Heavy cream

Directions:

Heat the oil in a skillet over moderate heat.
Add the onion and garlic, and sauté until tender but not browned
Add the chilies, Jalapeno and tomato. Break up the tomatoes with a spoon, bring to a low simmer.
Turn off heat. Add the cheese and stir until melted
If needed, add cream to reach desired consistency

Variation: If a smoother sauce is desired, puree with a hand-held blender.
