1 tablespoon olive oil
1/4 cup minced onion
1 clove garlic, minced
1 16-ounce can refried beans
4 ounces cream cheese, cut in small bits
Red chili powder to taste
1 jalapeno chili, seeded and minced
1 plum tomato, seeded and minced (or 1/4 cup tomato salsa)
1 cup medium or sharp Cheddar cheese

Directions:
Directions:
Heat the oil in a skillet over moderate heat.
Add the onion and sauté until softened, about 5 minutes
Add the garlic and sauté 1 minute
Add the beans and cook stirring, until the mixture is hot.
Stir in the cream cheese. Season with the chili powder.
Simmer over low heat 1-2 minutes. Stir in the remaining ingredients.
Heat, stirring, to melt the cheese.
Serve with tortilla chips.
