6 oz cream cheese
⅓ c fat free Greek yogurt
2¼ c salsa
1 c shredded cheddar cheese
1 c shredded jack cheese
2 c cooked boneless skinless chicken breast, shredded (medium shred)
1 can corn, drained
1 can black beans, drained
¾ tsp cumin
⅓ tsp dried oregano
⅓ tsp cayenne pepper
Salt and pepper
4 scallions thinly sliced, optional
2 pks Extreme! tortilla wraps

Preheat oven to 425º F

Boil chicken breast until thoroughly cooked
Shred chicken in food processor

Combine cream cheese, Greek yogurt, ¾ c salsa, ½ c cheddar cheese, ½ c Jack cheese

In separate bowl toss chicken, corn, cumin, cayenne, salt, pepper, and ½ of the scallions.

Combine chicken mixture with cheese mixture

Spread ½ c salsa on the bottom of baking dish
Roll ~½ c chicken stuffing into each tortilla
Place tortillas on salsa
Spread remaining salsa and cheese on top of tortillas

Bake for 25 - 30 minutes
When done sprinkle with remaining scallions
Serve with Greek yogurt, salsa, guacamole, etc.
