1 Tbsp unsalted butter (room temp)
1 cup (5 oz) AP flour
1 tsp baking powder
1/4 tsp sea salt
1/2 cup (4 oz) unsalted butter
1/2 cup (3 1/2 oz) granulated sugar
Zest of 1 lemon
2 eggs
1 tsp pure vanilla extract
2 apples, peeled, cored and each cut into 6 pieces
2 Tbsp turbinado sugar

Preheat oven to 350F.
Butter a 9 inch round baking pan.
Sift the flour, baking powder and salt together in a bowl.
Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the butter, sugar and lemon zest on medium high speed for 3 to 5 minutes, until light and fluffy.
Add the eggs, one at a time.
Scrap down the sides of the bowl after each addition.
Stir in the vanilla.
Add the flour mixture all at once and mix at low speed, until incorporated.
Pour the batter into the prepared pan.
Score the peeled side of the apples with the tines and arrange the apples on top of the batter.
Sprinkle the turbinado sugar over the top.
Bake for 40 minutes, cake should be lightly brown and toothpick comes out clean.
Cake around apples may appear underdown, it’s okay - it’s the moisture around the apples.
Allow to cool before slicing.
