1 egg
1 cup honey
1/2 cup melted butter
1/2 cup pineapple juice
1 1/2 cups finely chopped rhubarb
3/4 cup chopped walnuts
2 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp powdered ginger

Directions:
Directions:
Preheat the oven to 350F.
Beat the egg, honey, butter and pineapple juice.
Stir in the rhubarb and walnuts.
Sift together the flour, baking powder, soda, salt and ginger. Whisk together.
Combine the wet ingredients into the dry ingredients.
Stir, just to mix.
Grease two loaf pans.
Pour the batter into the greased loaf pans.
Bake 35 to 40 minutes.
Cool ten minutes in the pans.
Remove the bread from the pans, finish cooking on a wire rack.
