8 large eggs
1 tbsp Dijon mustard
1 tbsp minced shallot
salt and pepper to taste
1/3 cup mayonnaise
1 tsp white wine vinegar or cider vinegar
1/4 tsp hot sauce (Tabasco)
Paprika to garnish

Directions:
Directions:
Hard boil the eggs. Cool and cut in half lengthwise. Scoop yolk into bowl. Add all ingredients and blend. Garnish with paprika, capers, olive slice as desired.
