1 tbsp. butter
4 tbsp. onion, finely chopped
1 cup potato, mashed
1 tbsp. bread crumbs, fine & dry
1 lbs. lean ground beef
⅓ cup heavy cream
1 tsp. salt
1 egg
1 tbsp. fresh parsley, finely chopped
1 tbsp. butter
2 tbsp. vegetable oil
1 tbsp. flour
¾ cup cream, light or heavy

Directions:
Directions:
Melt 1tbsp. of butter, add onions and cook until soft and translucent but not brown. Combine onions, mashed potato, bread crumbs, meat, cream, salt, egg and optional parsley. Knead until well blended. Shape into 1"balls and arrange in one layer on baking sheet, Cover with plastic and chill at least one hour before cooking. In fry pan, melt butter and stir in 1 tbsp. flour. Add vegetable oil and cream, mix well and simmer. Pour over cooked meatballs.
