3T olive oil
2 cloves garlic ( 2 teaspoons of minced garlic from jar)
8 oz sliced mushrooms ( I use whole and slice myself)
13 oz package of fresh baby spinach
3T of pine nuts
1 lb uncooked frozen shrimp, peeled, deveined (20 - 40 count)
1/2 t salt
1/4 t pepper
Dash red pepper flakes, optional

Directions:

Heat olive oil in a wide skillet over medium heat. Add garlic and after about 30 seconds or so when just beginning to brown, increase heat to high and add mushrooms. Stir a few times, shake the mushrooms so they cover the bottom of the skillet and cook about 3 minutes.

Chop spinach coarsely and add to the mushrooms in skillet. Stirring occasionally, cook 3 minutes. Chop pine nuts (or not) and add to the skillet. Stir a minute or two. Add shrimp, salt, pepper, and red pepper flakes, if using. Cook, stirring occasionally, until the shrimp is cooked through, 3 - 5 minutes. Serve over orzo rice or thin spaghetti. Put pasta in a big pasta bowl and add the shrimp mixture on top and serve immediately.

Serves 4, just double for 8. I used 3 lbs shrimp instead of 2 lbs now that kids like this recipe but just doubled all the other ingredients.
