* 3 cups carrots, peeled and sliced
* 1 cup chopped onion
* 4 Tbsp butter
* 4 Tbsp flour
* 2 cups milk
* 2 cups grated cheddar cheese
* 1½ cups torn pieces of bread
* 2 Tbsp butter

Directions:
Directions:
Cook carrots and onions in boiling water for 10 to 15 minutes. Drain and place in a greased 2 quart casserole dish. In a sauce pan melt 4 Tbsp butter and add flour to make a roux. Gradually add milk stirring constantly until it boils for 1 minute. Turn down heat and add cheese, stirring until melted. Pour cheese sauce over carrots and onions stirring together. Pour into greased casserole dish and top with pieces of bread and dot with the remaining 2 Tablespoons of butter. Bake at 325º until bubbly and bread pieces are brown, about 45 minutes.

*Can substitute mini carrots for cut up carrots.
