2 T Butter
2 cups cornflakes coarsely crushed
3 T sweetened shredded coconut
2 cups Vanilla Ice Cream
1/2 cup hot fudge or chocolate sauce or caramel sauce, whatever you prefer

Directions:
Directions:
Melt butter in skillet over medium heat. Add cornflakes and coconut. Heat, stirring constantly until browned and crispy. Pour crumbs on a plate, cool slightly.

Scoop ice cream into 4 balls and roll in crumb mixture. Store on baking sheet in freezer until ready to serve, or up to six hours.

Serve on Crispy Cinnamon tortillas, spray both sides of 4 flour tortillas with cooking spray and sprinkle both sides with cinnamon sugar. Bake at 350 degrees for 12-15 minutes or until crispy. Put ice cream ball on top of baked tortilla's and pour warmed hot fudge, chocolate sauce or caramel sauce over the ice cream balls.
