Chicken Marinade
1 lb. chicken breast cut into slices
1 tbsp. chopped ginger
1 tbsp. chopped garlic
2 tbsp. Teriyaki sauce
2 tbsp. light soy sauce
¼ tsp. of salt
a dash of fresh ground pepper

Quinoa
1 cup quinoa
2 cups water or chicken stock
2 tbsp. olive oil
¼ tsp. of salt if water is used


Stir fry
2 tbsp. of sesame seed oil
3 chopped scallions or green onions
¼ tsp. of red chili paste
1 tsp. of chopped garlic
1 tsp. of chopped ginger
¼ red bell pepper cut into slices
¼ green bell pepper cut into slices
¼ yellow bell pepper cut into slices
¼ cup of chopped celery
¼ cup of sliced mushrooms
¼ cup of peas
¼ cup of diced carrots
¼ cup of light soya sauce
2 tbsp. of cilantro

Directions:
Directions:
1 Marinate the chicken in all the ingredients shown under Chicken Marinade for about 30 minutes.
2.In a saucepan, on medium high add olive oil and roast the quinoa for about 5 minutes.
3. Add chicken stock or water and salt. (If you are using chicken stock do not add salt)
4 When the water starts to boil, lower the heat and cover for about 20 minutes.
5. In a skillet or wok. on high heat add sesame seed oil.
6 Add the green onions or scallions, garlic and ginger and cook for a minute.
7. Add marinated chicken, and red chili paste and cook until the chicken in cooked,
8. Add the vegetables except peas if they are frozen.
9. Add the soya sauce and cook for about 10 minutes.
10. The vegetables should be crunchy and not overcooked.
11. If you are using frozen peas, add them after about 3 minutes.
12. Add the quinoa and stir until all the sauces and chicken are mixed well.
13. Add cilantro and serve.
