1 box yellow cake mix
1 box (3.4 oz) lemon pudding mix
4 eggs
3/4 cup oil
3 T oil (to use separately for glaze)
4 cup confectioners sugar
1 T lemon zest (1 lemon)
1/3 cup lemon juice
3 T water

Directions:
Directions:
Spray mini muffin pans with non-stick cooking spray.

Combine cake mix, pudding mix, eggs and 3/4 cup oil. Beat by hand for 2 minutes.

Spoon approximately 1 T of batter into each muffin spot in the pan.

Bake at 350 degrees for 11-12 minutes


Glaze:

In a large bowl, mix confectioners sugar, lemon zest, lemon juice, 3 T oil and water. Stir well until smooth. Place lemon cakes on a wire rack while warm and drizzle with a generous amount of glaze, allowing it to drip down the sides and pool in the center of the cakes if desired.

Let glaze set thoroughly before storing in air tight container.
