2 Large Chicken Breasts
2 Boxes Low Sodium Chicken Stock
2 Bay Leaves
1/2 Tbls Garlic (chopped)
3 Ribs of Celery (diced)
3 large Carrots ( sliced/diced)
1 cup Parsley chopped) (divide into 3 segments)
1 Medium Onion (diced)
1 Tbls Lemon Juice
1 Pkg Tortellini

1/2 c barley (optional)

Directions:
Directions:
Cook Chicken, Stock, onions, garlic, carrots, celery, lemon juice, bay leaves and 1/3 of the parsley on high until the chicken is cooked (reaches 160 degrees).

Simmer for an hour.

Add 2nd, 1/3 of parsley, cook for 1 hour.

Add Tortellini and add remaining parsley. Cook for another 20 minutes.

Note, add additional water as needed. I added a total of about 3 cups over the course of 3 hours cooking.
