* 4 whole bulbs of garlic
* 2 Tbsp olive oil
* 3 Tbsp butter(softened)
* 1 cup reduced fat sour cream or plain yogurt
* 2 pounds fresh salmon fillets ,skinned, boned and defatted
(remove the gray fat layer on fillet sides with a sharp knife) cut fillets into 6 pieces.
* 1 1/2 cups spinach leaves lightly packed. (optional)
If spinach is used. chop the leaves fine and mix them in with the garlic cream.ooo

To roast the garlic: Preheat the oven to 325*f. Set the 4 heads on sheet of aluminum foil. Drizzle the heads with olive oil and fold the aluminum foil around the heads loosely leaving the top of the packet slightly open. Set the aluminum foil wrapped garlic packet in a pan or oven proof dish. Roast the garlic for one hour or until the cloves feel very soft. Turn the oven off and let the garlic stay in the oven until the heads are cooled and can be handled with out burning your hands. Pick up each head and with a sharp knife cut the heads across the cloves. Squeeze the roasted garlic out of the head halves into a bowl. After all the garlic has been squeezed into the bowl Place the caramelized garlic and the butter in a processor and puree. Add the sour cream to the processor and blend. Place the fish in a well buttered baking dish and spread some garlic cream on each piece (about 2 Tbsp more or less).
Cover the dish with plastic wrap and refrigerate for 1 to 4 hours.
Remove the plastic wrap and bake in a preheated 350*F oven for 10 to 20 minutes until fish is cooked and can be easily flaked with a fork. The cooking time varies with the thickness of the fish pieces.
Alternative garlic cooking method:
Remove loose papery outer shell from garlic , leaving bulbs intact. Place bulbs in a small covered sauce pan. Add water to just cover and bring to a simmer. Simmer for 45 minutes, adding water as needed to keep bulbs submerged. Remove garlic and let cool. The cloves will be very soft and easy to peel. Peel and process the same as the roasted garlic in the recipe. Note: A) For dairy free diets skip the butter and sour cream and use dairy free yogurt with the garlic
