Pineapple Upside Down Cake Recipe

Pan Preparation

⅔ Stick of Butter
1 C Brown Sugar
1 Can Pineapple Slices
Maraschino

Cake Mix

¼ lb butter
1 C Milk
4 eggs
2 C Sugar
2 C Flour
2 tsp Banking Powder
Salt
1 tsp Vanilla
Directions:
Directions:
Make Cake Batter

Put Butter and Milk in pan on stove and scald; Let cook and set aside

In Mixing bowl, beat eggs until lemon yellow. Add sugar gradually and mix until dissolved
Fold in flour, Baking Soda and a pinch of salt
Add vanilla
Pour in butter and milk mixture and mix only until incorporated (do not over mix)

Prepare Pan (You will use a large cast iron skillet)

Melt Butter
Incorporate brown sugar
Pour into skillet
Add pineapple rings and place halved maraschino cherries inside the rings
Pour in Cake Mixture
Bake at 350º for 45-55 minutes
Flip out onto large cake dish as soon as it is done
